DELICIOUS NO GRAIN BANANA PEANUT BUTTER PANCAKES


Many people nowadays are trying to avoid grains in their diets. Some feel that we weren't designed to eat grains and others just want to avoid overdosing on carbohydrates. Then there are the issues of GMO altered grains, celiac disease, and gluten sensitivity. I personally have an issue with gluten so I was delighted when I came across this recipe in the cookbook "Internal Bliss". This cookbook is a "must have"companion to the book  "Gut and Psychology Syndrome by Dr. Natasha Campbell-McBride. Both books are very helpful in healing autoimmune disease who origins are linked to a leaky gut.

I had the pancakes pictured above this morning and wanted to share the recipe...as I find them delicious. No syrup is needed. The bananas make them just sweet enough. They are delicious with just some wholesome butter ....preferably from pastured cows. There are no unusual or expensive ingredients. Here's the recipe

3 eggs
2 TBSP natural peanut butter
1  very ripe banana

In a bowl mash together the banana and the peanut butter with a fork. Then add the eggs and mix together till everything is well combined. A few lumps won't matter. Heat your skillet and melt some butter or coconut oil in the pan, drop spoonfuls of the batter onto the hot pan and cook like regular pancakes. Just keep a close eye on them after turning  because the second side cooks more quickly.I keep a plate in a warm oven to add finished pancakes to keep them warm till all pancakes are cooked. This recipe couldn't be easier! You could also try substituting other nut butters. Enjoy!
